Any Good lemon cookies recipe?

I am looking to bake cookies with a texture similar to sugar cookies but without using a lot of sugar. I prefer recipes that don’t use cake mix, but finding one has been challenging.

I want to make tangy cookies that hold their shape and do not melt in the oven from too much lemon juice. I have tried creating my own recipe, but I can’t seem to get the proportions of flour, sugar, or butter right.

Any suggestions or recipes would be greatly appreciated!

Tangy Lemon Cookies Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest (from about 1-2 lemons)
  • 1-2 tablespoons lemon juice (adjust based on desired tanginess)
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.
  4. Add Wet Ingredients: Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  5. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough should be soft but not sticky. If it’s too sticky, add a little more flour.
  6. Shape Cookies: Scoop tablespoons of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each ball with the bottom of a glass or your hand.
  7. Bake: Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still be soft.
  8. Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes:

  • If you want even less sugar, you can try substituting some of the granulated sugar with a natural sweetener like stevia or erythritol, but this may slightly alter the texture.
  • The lemon zest adds a lot of flavor, so don’t skip it! It gives a more intense lemon taste than juice alone.
  • If you want to add a bit of extra tanginess without more liquid, consider adding a small amount of lemon extract.
