I made some apple hand pies using “Red Calypso” apples from our garden. The apples have red flesh, and the color is so pretty.

inspiring, thank you! do you cook your apples a bit before you bake them in the crust? I recently tried this apple dumpling recipe, the filling turned out awesome, but I was so sad the crust never came out, I think because I used red wheat and maybe didn’t roll it out thin enough. idk but I like your idea so much better, aesthetically and functionally. they really are gorgeous.

Yes, I did cook the apple filling first. Not til they’re too soft or anything, but this way I can thicken it and season it to my liking and taste it before filling. Also, easier to fill them with cooked/thickened/cooled filling that holds together well than a raw filling, I think.

Not over filling them is also helpful. I always have a hard time with that! Lol.
