I got married in December and always envisioned having a dessert table at my wedding instead of a traditional tiered cake. Alongside an assortment of desserts from our caterer, I wanted to personally bake a selection of treats for our guests.
Baking has been a therapeutic outlet for me, especially on tough days. I picked up the skill during the pandemic, and since I bake often to de-stress, my friends, family, and even colleagues have had their fair share of my creations. So when we started planning our (fairly small) wedding, it just felt right to do this. Oddly enough, baking a variety of desserts seemed easier than making a single multi-tiered cake—though in hindsight, I’m not sure what I was thinking!
I included some of my go-to bakes, my husband’s favorites, and family favorites. It might not have looked perfectly polished or professional, but every treat was made with love.
Here’s what I baked:
A layered vanilla cake with fresh berries, balsamic-berry coulis, and whipped mascarpone
Lemon-blueberry pound cake (dusted with icing sugar just before serving)
Tres leches cake
Dark chocolate-banana cake (vegan)
Mini pound cakes
Banana cinnamon cake with cream cheese frosting
White chocolate cranberry cookies
Brown butter chocolate chunk cookies
