Cakes are so intimidating to make but I make an exception for carrot cakes!

Ran out of oil so had to use combination of oil and butter instead - still came out great!

Raisin! While I love chocolate chips, I don’t think they belong in a carrot cake.

I bet you’d do great with bundt cakes, too. They’re also not super fussy to frost, versatile and pretty, and tend to not come out dry for me.

I might give it a try! There seem to be many opportunities to mess up taking the cake out of the pan though.

Nicely done. You could probably handle most basic cakes. They are not really any more complicated than the carrot cake unless you want to get fancy with the decoration. Angel food cake would be an exception unless you already know how to whip egg whites and fold.

I found that the cake baking part is not so bad. What really stresses me out is the frosting and all the cake decoration. Nowadays I stick to cakes with minimal frosting like mousse cake or banana cakes.

Ahh. I enjoy the decorating part. I can’t draw a pic if my life depended on it. But I can make a pretty looking cake. For me, it’s like, edible art, something I can be creative with, and worse case, if one looks bad, it’s only around a few days.

That’s a nice way to look at it! I think part of why I dread decorating so much is because I live in a very hot climate. Any decoration is always a race against time before everything melts, not to mention the transportation. Even simple chocolate-dipped cookies melt as soon as I take them out of the fridge. Bangkok heat is no joke!

I see that being an issue. A valid one.

I made a cake in June once without the AC working. It definitely required multiple rounds in the fridge for the cake and colored frosting.

I am tempted to try and come up with a spumoni flavored cake.

Sometimes you can just look at icing and tell that it is delicious. Carrot cake is my favorite.

I based my recipe on Sally’s Baking Addiction but used yogurt instead of applesauce, reduced sugar by 60%, and used oil + butter instead of just oil. Hope this helps!
