I’m making a batch of pancakes for a group with mixed allergies, including dairy and tree nuts. I have oat coffee creamer and am wondering if I could substitute it for the milk and sugar in the pancakes, maybe with some water too?

Oats can be problematic for some celiacs, so I would check that nobody in the group has a problem with them.

I just used half coffee creamer and half water and left out the sugar from the recipe, and it turned out really tasty.

Ultimately, I used one part water and two parts coffee creamer. It turned out quite fluffy even though I had to use a little extra pancake mix. something I cherished.
