What kind of bowl are you using in the microwave? I think that glass bowls will hold the heat, potentially overheating the white chocolate. I’ve always used plastic bowls for white chocolate in the microwave and I’ve never had an issue.

I’ve tried glass and various thicknesses of ceramic. I try not to microwave plastic, even if it’s labelled microwave-safe worked as a chemist for several years doing consumer product labeling and it falls into my “not going to poison you today, but won’t really help you either” bucket. But people should use their own comfort/risk thresholds for these borderline things IMO, not trying to dictate what other people should do.
Is this a thing? I’ve never had problems melting white chocolate in a bowl over some boiling water. As long as it doesn’t touch the water, of course. Is this an American issue (in that your white chocolate composition is different)?

No idea, never tried melting white chocolate outside the US, but I tried it just the other week with the standard double boiler method and it seized and scalded, as it’s done for me in the past. Wouldn’t be surprised, though.

I think I had success with melting my white chocolate and drizzling, but only AFTER I added a touch of Crisco to it…and it was a full moon.

Thank you for posting this. For the last few years my family has thought I was utterly insane for saying how much I sounded like a possessed person because I could never get white chocolate to melt correctly like all the others I have used. Seriously, you made my Christmas! I now know, I am not alone–not the only one!

It’s because you aren’t using actual white chocolate. You are using sugar and palm oil.
Real white chocolate is very expensive.

Nope, using white chocolate made with cocoa butter as white chocolate should be. It was indeed fairly expensive. I also tried the palm oil based “vanilla melting wafers” and those also were pesky, though!
A few years ago, these little chocolate melter appliances were all over everywhere. They were like $20 from discount stores & they were brilliant. I still have one, but everybody I know is determined to part me from it. They just can’t be found anymore.

Oh look, looks like they’re coming back. Wilton have one now, and there are cheaper versions on Amazon. Worth every penny - I promise. Not just for melting, but also for keeping it at a consistent working temperature while you work.
