I used the recipe from a post a couple of days ago that was way nicer than mine, but I’m happy for a first attempt. Planning to make it again for my wife and daughter but apply a couple of lessons from this effort to try to improve.

I am away from home and had no access to piping tips, so it’s just a sandwich bag with the corner snipped off to produce cream blobs.

What lessons did you learn from this bake that you’ll apply to your second bake?

  1. I’ll use a thicker layer of cream in the middle of the sponge to provide a squishier center.

  2. I’ll use more syrup before adding the middle strawberries and cream. I think it can handle a little more sugar to offset the cream.

  3. I’ll stand the top layer of strawberries vertically for a nicer effect.

Update: the cake has been eaten and I’m happy with the taste. One guy broke a 36-hour fast and still said it was good… :joy:
