So impressive for your first cake! My advice to lessen the sweetness is to try a different frosting. Classic American buttercream is way too sweet for me, so I love less sweet American dreamy buttercream from sugarologie. It’s much more buttery in flavor and so nice. I love it for a beginner because you don’t have to mess with whipped egg whites or hot syrup like any of the meringue based frostings. Give it a try! (EDIT: note that she doesn’t actually recommend this for beginners, so definitely read the whole article, watch the video, and follow the recipe very carefully. A stand mixer is also required for this recipe because it’s an emulsion that you have to beat a LOT.)
Also, you could do a different filling to cut the sweetness a little. Lemon curd is great or even something like a good raspberry jam brings an element of acidity and tartness that goes so well with everything else. Just pipe a border/dam of frosting on top of your lower layer, spread your filling of choice, and stack the next layer. Then crumb coat and chill it well so nothing slips off.
@Val
I’m a big fan of sugarologie, but I also know that people aren’t always a fan of her recipes because they’re not super sweet (even though she repeatedly stresses her recipes aren’t sweet compared to the norm).
That’s a gorgeous as hell cake and I think it’s important we comment on how gorgeous it is.
That looks delicious! Congratulations. Scratch is a lot art and I can tell you all who partake will be deeply grateful!
Beautiful.
Amazing! Love a classic white cake. Nice job.
Looks beautiful! You may have to try a different frosting recipe or type of frosting for it to be less sweet. An alternative is to cut into smaller pieces or fill with fresh fruit filling.
It looks very tasty and I am not even a cake person.
It looks tasty.
Looks great!!
Looks amazing!
Looks very nice!! I’m sure it tastes real good too!
Congratulations on making your first homemade cake! It looks absolutely delicious and the fact that you made it from scratch is so impressive. I love the funfetti theme for your daughter’s first birthday, it’s such a fun and colorful choice. As for making it less sweet, maybe you could try reducing the amount of sugar in the recipe or using a different type of frosting that is less sweet. Experimenting with different techniques and flavors is all part of the fun of baking. Good luck with making the 3-layer cake for the birthday party, I’m sure it will turn out amazing! Keep up the great work and happy baking!
Looks good!
First ever?! How is that possible?! It’s flawless!!
I’ve been baking cakes from scratch for many years, and still haven’t mastered frosting them nicely, at all.
Well done.
Well done!! Looks yummy!!
That is a great cake! For a 1 year old, I think the sprinkles are great on the bottom. Ermine frosting is one of my favorites, less sweet but delicious. It doesn’t “crust” so I only use it for cakes that don’t have to travel. For those cakes, I generally use this recipe from Sugar and Sparrow. Also, I often use a little less powdered sugar to cut down the sweetness.
I bite?
