I did NOT realize how many people would want the recipe!!! But here it is! All I ask is that if you try this recipe, PLEASE PM/chat me and let me know if there’s anything I can tweak to make it better!!! I really want to know what y’all think. I am NOT a baker! I’m an excellent cook but cannot bake to save my life. I wanted to change that!
Browned Butter Brownie
1 cup salted butter - browned
1/2 cup dutched cocoa
1/2 cup unsweetened cocoa
1 cup semi-sweet mini chocolate morsels
1 can condensed milk
1 cup white granulated sugar
2 tsp vanilla
3 eggs + 1 yolk
1 cup flour
1 tablespoon cornstarch
Preheat oven to 325 F.
Brown butter over low heat, stir frequently.
Remove from heat for 2 minutes.
Stir in cocoa powders and chocolate chips until well incorporated.
Mix in condensed milk.
Beat eggs in stand mixer with sugar and vanilla until pale, fluffy and sugar is mostly dissolved.
Sift in flour, add chocolate mixture & fold together. Do not use mixer.
optional: mix in walnuts or chocolate chunks
Line pan with parchment paper.
Bake at 325 for 25 minutes or until toothpick comes out clean with sticky crumbs (not batter, but not clean).
Former pastry chef here. Looks great, although a little tall, but that might be the angle and don’t know how big your hands are. Not overly tall though. Depends on the application if other than eating as is.
Center looks appropriately chewy, but a little gooey on the top one, like it could have used another minute.
A little cakey in the right spots on the bottom one… Looks like you baked it enough.
Would love to see an entire cross section of the whole thing, pan end to pan end.
You can also use insulating strips around the outside of the pan to prevent overcooking the edges if the interior is still super gooey.
Use an oven thermometer to test spots around your oven to check for hotspots. If you have convection, use it but may need to adjust time.
