My husband’s friends are visiting from out of state tonight, and it was a last-minute arrangement. Now, I’m scrambling to prepare a dessert to accompany the pizzas I’m making. Any quick and simple ideas?

How about making some quick and easy desserts like chocolate peanut butter bars, Oreo truffles, fruit parfaits, ice cream sandwiches, or cheesecake bites? Try one of them,

One of my favorite simple desserts is Eaton Mess. In my variation, I whisk the cream with powdered sugar and vanilla, then incorporate it into Greek yoghurt. Arrange this in a bowl with frozen raspberries and crumbled meringues (Trader Joe’s has excellent ones). After the cream/yoghurt mixture, I add the berries and then the meringues. Repeat twice. Store in the fridge until you’re ready to serve!

Your take on the Eaton Mess looks really good and really simple to prepare! It’s delicious to combine cream and Greek yogurt, then top with crushed meringue and frozen raspberries. Regards for sharing this delicious dessert recipe!
