I've Been baking for 6 years and still make the occasional mistake

Amateur baker who makes a pretty good amount of stuff for friends, family and school fundraisers. If you ever wondered what pumpkin muffins without baking powder or soda look like, this is it. I opened the oven and immediately knew I forgot those ingredients. They weigh like 2 lbs each lol.

I’VE DONE THIS EXACT THING?? Pumpkin muffins with no baking soda??:sob::sob::sob: I’m so sorry it’s so disappointing.

I also laughed as I ate one. I laughed when my wife asked what the hell happened. I laughed when my teenage son didn’t care and scarfed one in seconds. I laughed when I gave some to my friend and suggested she put them in a bowl and cover with french vanilla ice cream from Costco.

I didn’t laugh when I did the math on what the eggs cost for this recipe.

I make bread all the time. In my last batch, though, I forgot to add salt!! It’s edible, but it made me appreciate salt in foods all the more.

I hate when I eat the first cookie and realize I left out the salt. Sooo flat (tasting)!

Try eating it with salty cured meats like prosciutto or salame! Where I’m from, bread is traditionally made without salt.

I have NO idea what went wrong, but the batter exploded out of my stand mixer. ¯_(ツ)_/¯

I made a cake last night, same recipe I’ve been making for 15 years. My bird brain set the temp to 425 instead of 360 and it was a burned mess! My husband still ate the insides that weren’t charred, the dear.

Me too, and I’ve been baking for over 65 years. It happens.

This is the only time it ever happened to me. I assume it’s because they didn’t expand enough into the liners. Are you under-filling yours?

I’ve certainly made mistakes like that before. Been baking much longer than 6 years, but some of the larger mistakes I’ve made have been:

  • Forgetting to add the eggs to a cake. Pulled it out of the oven (had been baking for a couple of minutes) and mixed in the eggs while still in the baking pan. Actually turned out OK.
  • Used baking soda instead of baking powder while making lemon bars. The baking soda neutralized the acid in the lemon juice. They were edible, but not the sour lemon bars I was shooting for.
  • Overthinking too much and putting the oven too high, charring the bottom of some chocolate cookies. I used a fine cheese grater to sand the char off the cookies, and they were perfectly fine afterwards (but my sink was covered in charred cookie dust).

And I agree with the comment about just slapping some frosting on your dense muffins. As long as they taste good, nobody will care. Hell, even a “fail” like those probably still tastes better than a ton of the crap people buy at the store.

Happens to all of us. I made yogurt muffins the other day and also forgot to add baking powder. Ironically, I put it with the rest of the ingredients on the counter. Just forgot to add it to the batter.

Are those potatoes?

I made biscuits for strawberry shortcake recently - without a pastry cutter, mind you, so I had to cut the butter into the flour by hand, which took forever. Kneaded the dough and everything.

Didn’t realize I had carelessly used baking soda instead of baking powder until I took them out and took a bite. I never realized how disgusting baking soda is lol, and boy does it have a strong flavor.
