I followed this recipe: Ooey Gooey Butter Cake
Ingredients for the Cake:
- 1 package yellow cake mix
- 2 eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup (113g) butter, melted
Ingredients for the Filling:
- 1 package (8 ounces) cream cheese, room temperature
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup (113g) butter, melted
- 4 cups confectioners sugar
Instructions:
- Preheat oven to 350°F (I set my convection oven to 325°F).
- In a bowl, combine the cake mix, 2 eggs, 1 tsp vanilla, and melted butter. Mix with a fork until fully incorporated.
- Spray a 9x3-inch round cake pan or a 9x13-inch pan with baking spray, or line the bottom with parchment paper.
- Press the cake mixture into the bottom of the prepared pan, flattening it as much as possible.
- In a stand mixer, beat the cream cheese, remaining eggs, vanilla, and melted butter on medium speed until creamy.
- Gradually add the confectioners sugar, one cup at a time, mixing on low speed until all the sugar is incorporated.
- Pour the cream cheese mixture over the cake mixture.
- Bake for 35-45 minutes. Remove from the oven when the edges are brown, but the center is still slightly jiggly. Avoid overcooking.
- Allow the cake to cool before serving.
