St. Louis Style Ooey Gooey Butter Cake

I followed this recipe: Ooey Gooey Butter Cake

Ingredients for the Cake:

  • 1 package yellow cake mix
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (113g) butter, melted

Ingredients for the Filling:

  • 1 package (8 ounces) cream cheese, room temperature
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup (113g) butter, melted
  • 4 cups confectioners sugar

Instructions:

  1. Preheat oven to 350°F (I set my convection oven to 325°F).
  2. In a bowl, combine the cake mix, 2 eggs, 1 tsp vanilla, and melted butter. Mix with a fork until fully incorporated.
  3. Spray a 9x3-inch round cake pan or a 9x13-inch pan with baking spray, or line the bottom with parchment paper.
  4. Press the cake mixture into the bottom of the prepared pan, flattening it as much as possible.
  5. In a stand mixer, beat the cream cheese, remaining eggs, vanilla, and melted butter on medium speed until creamy.
  6. Gradually add the confectioners sugar, one cup at a time, mixing on low speed until all the sugar is incorporated.
  7. Pour the cream cheese mixture over the cake mixture.
  8. Bake for 35-45 minutes. Remove from the oven when the edges are brown, but the center is still slightly jiggly. Avoid overcooking.
  9. Allow the cake to cool before serving.
