Suggestion for cheap, box-style ice cream sandwiches at home?

My husband has a fondness for the rectangular ice cream sandwiches available at the grocery store, featuring soft, cakey cookies enveloping fluffy ice cream, typically found in boxes of twelve. However, his favorite ice cream flavor, black raspberry, isn’t commonly found in these store-bought treats. To surprise him, I want to recreate those soft, cakey cookies at home to pair with black raspberry ice cream and create a special homemade version. Most “homemade ice cream sandwich recipes” I’ve found aim to improve upon the store-bought version, making the cookies chewier or more chocolatey. However, I’m convinced that he prefers the soft, tender, cakey texture of the grocery store variety. If anyone has a recipe that can help me achieve that texture, I would be incredibly appreciative!

I understand that you may divide any of your favorite brownie or cookie recipes in half for your particular needs, and then divide the mixture between the two pans that are needed to get the right thickness. After that, simply cover one of the pans with plastic wrap, add the ingredients, wrap everything up, refrigerate, cut, and serve.

@Mitchelle The majority of cookies and brownies freeze solid, making them unbitterly. The best option is to use a recipe meant for an ice cream sandwich.
