Vanilla Cake Recipe?

I have a fantastic recipe for a rich, fluffy, and moist chocolate cake, but I struggle to find a vanilla cake recipe with the same texture. My vanilla cakes always turn out too dense. Hey Tosca, Easy Vanilla Cake Recipe (makes one 9-inch cake)

Ingredients:

  • 2⅔ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 large eggs (at room temperature)
  • ¾ cup milk
  • ¾ cup vegetable oil
  • 1 tablespoon vanilla extract
  • Cooking spray (for greasing)
  • Parchment paper (for lining)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk eggs, milk, oil, and vanilla until well combined.
  4. Gradually add wet ingredients to dry ingredients, mixing until just combined. Do not overmix.
  5. Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Frosting and Decorations (Optional):

  • Frost with your favorite frosting or dust with powdered sugar.

Tips:

  • Use brown sugar for a richer flavor.
  • Ensure all ingredients are at room temperature.
