@Magdelina thanks for the great suggestion. Quinoa stir-fry sounds delicious and so easy to whip up after a long day. I love adding bell peppers, broccoli, and snap peas for a bit of crunch. Sometimes I’ll throw in some edamame too for extra protein.

Just sauté some bell peppers, onions, and black beans, then serve in corn tortillas with avocado and salsa. It’s fresh, satisfying, and takes less than 30 minutes. Plus, leftovers make a great lunch.

A simple and delicious recipe I enjoy is caprese pasta. Cook your favorite pasta, then toss it with cherry tomatoes, fresh mozzarella, basil, and a drizzle of balsamic glaze.
