Yet Another Cookie Box

Did a spread for my Instagram before packing my boxes for mailing. Back is killing me, but I’m really pleased how everything turned out. Recipes upon request.

  • Bailey’s fudge
  • Macarons (Sugarplum, gingerbread, orange chocolate and hot chocolate)
  • Gingersnap cookies
  • Chocolate Macaroons
  • Macadamia coconut cookies
  • Red velvet snowflakes
  • Christmas Pudding truffles
  • Brownie mince pies
  • Chocolate peppermint thumbprints

I spent an hour a day for a week making all the doughs and freezing them, and the macaron shells (then freezing). It took another 18 hours over 3 days to bake/fill/decorate.

Thank you! Macarons will definitely try your patience. Every single step is crucial and unforgiving. this recipe is the one I’ve had the most luck with.

Go for it! These are the tips in my baking notes:

  • DON’T over mix eggs
  • DON’T over macaronage. Batter should completely settle into itself within about 15 seconds.
  • DON’T use too much food coloring.
  • Use half sheet pans.
  • Bake one tray at a time, middle rack.
  • 14 minutes.
  • Leave on tray 15 minutes before moving to racks.

Here’s the recipe. I must confess I’m taking the following shortcuts: I use refrigerated pie dough, rolling it on powdered sugar instead of flour, and using canned whipped frosting.

They are super pretty and though most people are cautious to try them due to “mincemeat”, it ends up being their favorite thing in the box. Enjoy!

Almost forgot, I spray the mini muffin tin with baker’s spray (the kind with flour in it) for easy removal. They’re not super complicated, and definitely doable for the casual baker with the shortcuts. Good luck!

Thanks! I use the Betty Crocker Gingersnaps Recipe, using the butter Crisco baking sticks. They have a great flavor and texture.

What’s your recipe for the red velvet snowflakes?
