Recipe:

  1. Mix flour, icing sugar, salt, and butter until crumbly. Add egg, vinegar, and water to form a smooth dough. Rest for 30 minutes.

  2. Roll dough thin, cut into 4-inch circles, and wrap around cannoli molds. Seal with egg white.

  3. Fry in oil at 375°F until golden (2 mins or so). Cool and remove molds.

  4. Mix ricotta, icing sugar, vanilla, cinnamon, lemon juice, and zest for the filling. Pipe into cooled shells.

Hey!

Traditional cannoli uses wine but I substituted wine for white vinegar since I don’t drink wine.

Ingredients for the cannoli shells:

  • 2 cups (250g) all-purpose flour;
  • 2 tbsp icing sugar;
  • 1/4 tsp salt;
  • 3 tbsp butter;
  • 1 large egg;
  • Egg white (for sealing the cannoli shell);
  • 1 tbsp white vinegar and 2 tbsp of water.

Ingredients for the filling:

  • 500g of ricotta;
  • 100g of icing sugar;
  • Vanilla pod (or vanilla extract);
  • A dash of cinnamon;
  • 2 tbsp Lemon juice and I grated some lemon zest too.

Thank you! :blush: The hardest part was definitely the dough – it’s tricky because it can be too thin, not sealed properly, or even fall apart. But once you get the hang of it, it gets a bit easier.

Reminds me of this little bakery in Agawam, MA. They look incredible!
