I made it the day before so I could enjoy it right away Even better the day after being in the fridge

That’s awesome Unfortunately we had fog all day so no views but I was still thankful to be out there and push myself

Third place that’s fantastic

I just sat on my couch and had some chips and dip

Ingredients

Yield:12 servings

  • Unsalted butter or nonstick spray for greasing the pan
  • 1¾cups/350 grams granulated sugar
  • 2¼pounds/36 ounces cream cheese at room temperature
  • ¼teaspoon kosher salt (like Diamond Crystal)
  • 5large eggs
  • 2cups/480 milliliters heavy cream
  • ¼cup/30 grams all-purpose flour

Preparation

  1. Place a rack in the center of the oven and heat it to 400°F/200°C Grease a 10-inch springform pan and line with parchment paper leaving 2 to 3 inches overhanging the top of the pan (You can trace and cut a circle for the base and a band of paper for the sides but pressing an entire sheet into the pan is easier Just fold the paper where it creases If you use multiple sheets grease in between so they stick)
  2. In a large bowl with a hand mixer or in a stand mixer with the paddle attachment cream the sugar and cream cheese until smooth (You can do this by hand too beat with a wooden spoon for about 5 minutes)
  3. Add the salt and mix Add the eggs one at a time and beat until fully mixed in Then stir in the cream Add the flour then mix it on low
  4. Pour the batter into the pan and bake until the top is brown and almost burnt 50 to 60 minutes The center will still be wobbly Let the cake cool on a rack It will rise a lot but will sink in the center as it cools
  5. Before serving remove the rim of the springform and carefully pull away the parchment paper Serve at room temperature.

Amazing After I finish a race I just want to lounge around I can’t imagine baking right after Congrats on third place that’s really inspiring
