A few strange lessons I’ve picked up throughout the yearsI don’t bake more than one tray at once. It might be the ovens I’ve used, I’m not sure.However, there’s a problem every time, and their results are inconsistent. (2) Use a cold pan at all times. Never dump cookie dough onto a hot skillet while working in portions. First, let them cool. (3) Verify that your oven is at the temperature you have set with an oven thermometer. (4) Before baking, place the cookie dough in the refrigerator for at least one hour. For practically every cookie recipe, this is accurate.

I’ve never had to use an oven thermometer, but everything you’ve said is spot on. But I usually refrigerate cookie batter for one entire night. I ladle the dough onto a tray coated with wax paper. Scooping from a bowl of refrigerated dough is more difficult than this. Additionally, there is a decreased chance of breaking the cookie scoop handle. I flatten the dough into patties and arrange them in close proximity on the tray. First, cover with foil, then plastic wrap. The next day, I bake them. I remove enough to fill one cookie sheet and store the remainder in the refrigerator.

I like to bake using flat cookie sheets that have an edge that is inclined for easy handling. Personally, I’ve never used cookie sheets with rims. Once, I scored a “great buy.”

I have never had good luck with baking 2 sheets of cookies at a time. Maybe all my ovens have been garbage. Actually yes, all my ovens probably have been garbage.

Exactly! I watch tons of cooking shows and see them baking multiple trays and they turn out fine. So it must be MY ovens.

YES! I agree! I had a friend come over to bake cookies with her daughter a few years ago and she insisted that we put two trays in at one time and I was appalled! Of course they came out bad lol. Why did I listen to someone who came over to MY house to bake cookies with their kid? If you know how to do it, do it at home! lol.

The darker pan also has an impact. Get another light colored one! I love nordicware for baking pans of all sizes.

I have a bottom element and nothing on top. I’ve found with my oven, that if I keep anything on the bottom half of the oven, the bottom will burn. It’s the element getting too hot and it being too close to it.
