King Arthur Baker’s Companion is my ultimate resource. It taught me more about flour than I ever imagined knowing. Plus, the recipes in there are just fantastic.
My top pick is “A Good Bake” by Melissa Weller. However, for any baking endeavor, I always turn to “Joy of Cooking” (I have the latest edition), which covers everything I need.
In college, I used this book: Advanced Patisserie and Baking.
Eight years after I graduated, there are still a ton of principles in it that I find useful. I especially like the images and the troubleshooting it provides for recipes and calculations. I learned how to make my own recipes as well.
