For the past few years, my husband and I have had a tradition of baking each other a homemade cake for our birthdays. He always requests a pineapple upside-down cake, wanting it to taste like the ones his grandma used to make for him when he was young. Surprisingly, I found out last year that her recipe came from a box mix, lol.
Does anyone have a recipe or any helpful tips they’d like to share? I’m determined to impress him this year!

Not my personal recipe but I’ve tried it a few times and the results are amazing everytime:
Pineapple Upside-Down Cake
Bake at 350F for 45 minutes
Make one 9" round cake
1/2 cup butter
1 cup brown sugar
8 pineapple slices packed in juice, drained and 7 slices halved
10 maraschino cherries, drained and halved
1 1/4 cup sifted all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup white sugar
1/4 cup butter, room temperature
3/4 cup milk
1 teaspoon vanilla
1 egg
Melt first amount (1/2 cup) of butter, stir in brown sugar and heat until brown sugar is dissolved.
Pour into a greased 9" x 2" round cake tin.
Arrange pineapple slices and maraschino cherries in butter-sugar mixture.
Sift flour, baking powder, salt and white sugar into large bowl. Add second amount (1/4 cup) butter and milk. Beat 2 minutes at medium speed with mixer, scraping down side of bowl several times. Add vanilla and egg, beat 2 minutes longer. Pour over the fruit in baking pan.
Bake in moderate oven (350F) 45 minutes, or until center springs back when lightly pressed with fingertip.
Invert cake on serving plate; leave baking pan in place 2 minutes. Lift off pan.
Serve warm with whipped cream.
I whipped the egg whites first, set them aside, and then proceeded to create the cake, folding the whites into the mixture before pouring it into the pan and baking it. The closest thing I have found to my own grandmother’s recipe for TOHs is this one.
