What's the best cake you've ever tasted?

I mean, it was the absolute best. Not like your grandma’s recipe that’s just pretty good. It was so good, you could eat it every single day. The one I had, which I sadly don’t know how to make, was a dark chocolate peanut butter crunch cake at a friend’s birthday party.

We had smoked a joint, which might’ve affected my memory, and then we devoured huge slices of the cake. I still can’t stop thinking about how amazing it was.

A restaurant in Harlem served red velvet cake. I can’t recall the name, but they serve chicken and waffles. It was the finest cake I’d ever had. It literally melted in my tongue. Unfortunately, I’d have to take an 8-hour plane ride to do it again.

My acquaintance spent almost twenty years working in the front of house at his family’s restaurant. In February 2020, he baked a matcha roulade as a special occasion and uninvitedly gave it to me with a cup of hot jasmine tea. He took great pride in it. It was a tight curl. The icing was creamy and subtle rather than too sweet. It tasted excellent and looked neat. Two months later, covid claimed his life. Even though they now purchase in the sweets, I still frequent the eatery. It isn’t equivalent. I’ll miss you, friend!

Dark Chocolate Peanut Butter Crunch Cake

Ingredients:

Cake:

  • 1 3/4 cups flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3/4 cup cocoa powder
  • 2 cups sugar
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Peanut Butter Filling:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2-3 tbsp heavy cream

Chocolate Ganache:

  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream

Crunch Topping:

  • 1 cup crushed peanut butter cups
  • 1 cup crushed pretzels

Instructions:

  1. Cake:
  • Preheat oven to 350°F. Grease and flour two 9-inch round pans.
  • Combine dry ingredients. Add eggs, buttermilk, oil, and vanilla. Mix until smooth.
  • Stir in boiling water. Pour into pans and bake for 30-35 minutes. Cool completely.
  1. Peanut Butter Filling:
  • Beat peanut butter and butter until creamy. Gradually add powdered sugar and heavy cream.
  1. Chocolate Ganache:
  • Heat cream until boiling and pour over chocolate chips. Stir until smooth.
  1. Assemble:
  • Spread filling between cake layers. Pour ganache over the top and sprinkle with crushed peanut butter cups and pretzels.
